Off the grill: Inspired burger recipes

Spring is finally here! Nothing beats the intoxicating aroma of a barbecue to signal the end of winter, so fire up the grill and take a moment to celebrate by cooking up a classic warm weather favourite… a mouth-watering grilled burger!

Burger

The diner burger

Serves four

Ingredients:

  • 3/4 cup finely chopped onion
  • 1 large egg, lightly beaten
  • 1/3 cup dried breadcrumbs or 6 crushed saltine crackers
  • 1/3 cup ketchup
  • 1/4 teaspoon salt
  • 1/2 teaspoon fresh cracked pepper
  • 1 pound lean ground beef
  • 4 sesame-seed hamburger buns
  • 4 processed cheese slices
  • 4 leaves of washed, dried leaf lettuce
  • 1 beefsteak tomato cut into 4 slices
  • 1/3 of a red onion, thinly sliced
  • dill pickle slices
  • mustard
  • mayonnaise
  • ketchup

Directions:

  1. Preheat the grill to high.
  2. Combine the first seven ingredients in a medium mixing bowl. Use your hands to mix the ingredients.
  3. Divide the mixture into four equal parts; then, form into patties.
  4. Reduce the grill temperature to medium and grill patties for approximately seven minutes per side, or until cooked through.
  5. Melt one cheese slice on each of the hamburger patties for the last one to two minutes of grill time.
  6. Split the hamburger buns and lightly toast on the grill.
  7. Layer the burger patties on the buns with the lettuce, tomato, sliced onion, pckles and condiments.

The smoky blue-cheese burger

Serves four

Ingredients:

  • 1 tablespoon obutter
  •  1/2 an onion, sliced fine
  • 1-1/2 cups sliced button mushrooms
  • 1/2 teaspoon fresh cracked black pepper
  • 1 to 1-1/2 pounds lean ground beef
  • 1 large egg, lightly beaten
  • 1/2 teaspoon smoked paprika
  • 1/4 cup tomato paste
  • dash ground pepper
  • 1/2 cup crumbled blue cheese
  • French-fried onions
  • Steak sauce, to taste
  • 4 washed and dried leaf lettuce leaves
  • 4 sourdough hamburger buns

Directions:

  1. Preheat the grill to high.
  2. In a medium frying pan over medium heat, melt the butter. Add the sliced onions and mushrooms. Saute until the onions are tender and the moisture from the mushrooms has been cooked off. Set aside.
  3. In a medium mixing bowl, use your hands to mix together the ground beef, egg, paprika and tomato paste. Form the mixture into four patties.
  4. Reduce the grill heat to medium and cook the patties for approximately seven minutes per side or until cooked through.
  5. Split buns. Layer one cooked patty, blue cheese, some of the onion and mushroom mixture and some French-fried onions. Drizzle on steak sauce to taste; then, finish with a lettuce leaf. Repeat with the other buns.

Southwest-style burger

Serves four
Ingredients:
  • 4 thick slices of onion
  • 1 tablespoon oil
  • 1 to 1-1/2 pounds lean ground beef
  • 1 tablespoon freshly ground black pepper
  • 1/2 teaspoon ground cumin
  • 1/2 cup finely chopped onions
  • 1/2 cup chopped mild green chilies
  • 1 egg
  • 1/2 teaspoon of salt
  • 4 kaiser buns
  • 4 burger-sized slices of pepperjack cheese
  • 4 burger-sized slices of cheddar cheese
  • chunky medium salsa
  • a handful of cilantro, chopped
Directions:
  1. Preheat grill to high heat.
  2. In a medium pan, heat oil over medium heat and saute onion slices until tender. Set aside.
  3. Using your hands, mix the ground beef, pepper, cumin, chopped onions, chilies, egg and salt. Form into four patties.
  4. Reduce grill heat to medium and cook patties for approximately seven minutes on each side or until cooked to well done.
  5. Split buns. Layer the salsa, cheddar, a cooked hamburger patty and pepperjack cheese; then, top with chopped cilantro.
