Grapefruit and mint creme brulee recipe

Keep the high heels in the closet and pull out your favorite hoodie. This date night is dedicated to relaxation and simplicity. A little quality time spent free of television, laptops and cell phones could be just what your relationship needs. Unplug and light the fire, the only place you’re going is to the couch.

Date Night -- Unplug

Sometimes date night doesn’t need to involve any major event, a fancy dinner or even a cute outfit. An evening spent relaxing and perhaps not even talking may just be exactly what you both need after a long week. Take a trip to the library and pick out a book you’ve been dying to read or ask the librarian for some recommendations. Head home to a warm couch covered in blankets, a roaring fire, and just you two and your newfound reading material. Commit to spend the night free of distractions.

Of course you’ll need to eat, so after a simple dinner — take-out perhaps — treat yourselves to this light and tangy version of creme brulee. Grapefruit is in season and its refreshing flavor will remind you of warm summer days. Custard is generally a diet buster, but this creme brulee recipe uses nonfat Greek yogurt and very little sugar. Save the extra mint and grapefruit and make up a few mojitos to enjoy while you lounge on the couch.

Grapefruit and mint creme brulee

Serves 4

Ingredients:

  • 1/2 cup fresh squeezed grapefruit juice
  • 1 tablespoon sugar
  • 1-1/4 cups Greek yogurt
  • 2 eggs
  • 1 teaspoon grapefruit zest
  • 2 teaspoons finely chopped fresh mint
  • 1/2 a grapefruit, diced
  • 1 teaspoon sugar for topping

Directions:

  1. In a small saucepan, bring grapefruit juice and one tablespoon of sugar to a boil. Boil until about half the liquid remains. Set aside to cool.
  2. In a bowl, mix yogurt, zest, chopped mint and eggs.
  3. Preheat oven to 350 degrees F. Fill a baking dish about halfway with water.
  4. When juice is cooled, mix it into the yogurt mixture. Pour the mixture into four oven-safe ramekins. Place the ramekins in the baking dish filled with water. About half of the ramekin should be sitting in water.
  5. Bake for 25 minutes or until the mixture firms up. It will still jiggle a bit when you remove it.
  6. Refrigerate for at least two hours or overnight.
  7. When ready to serve, top with a spoonful of chopped grapefruit and a teaspoon of sugar. Using a small torch, carefully burn the sugar until it is a golden brown color. If you don’t have a torch, you can stick the ramekin under the broiler for a few minutes. Watch it carefully so it doesn’t burn.
