Gluten-free Friday: Curried turkey salad and sandwich bread

What’s one of the best things about Thanksgiving dinner? Turkey leftovers! The day after Thanksgiving (or even the night of) might be known for Black Friday shopping specials, but it’s also known for piling turkey and other goodies on for sandwiches or other concoctions when your tummy (finally) starts to grumble again.

If you are sensitive to gluten, you have options for delicious leftover sandwiches. Are you looking for something a little different than just another turkey sandwich? Then read on! Just be sure to use gluten-free bread for your second feast. If you don’t have any gluten-free rolls or bread left over from Thanksgiving, hit the grocery store. Curried turkey salad

Serves 4 people

Ingredients:

  • 2 cups cold cooked turkey, shredded
  • 1/2 gluten-free mayonnaise
  • 1/2 teaspoon gluten-free curry powder (more or less to taste)
  • 1/2 cup walnuts
  • 3/4 cup celery, chopped
  • 1/4 cup onion, diced
  • 1 cup grapes, halved
  • Salt and pepper to taste

Directions:

  1. Add the shredded turkey to a medium-sized bowl.
  2. In a large bowl, add the mayonnaise, curry powder, and salt and pepper. Mix together well. Fold in the celery, walnuts, onion and grapes and mix everything together.
  3. Add the turkey to the other ingredients and fold together.
  4. Refrigerate for about 30 minutes before serving.
  5. Spread the salad mixture onto gluten-free bread for sandwiches or serve on a bed of salad greens.
