It’s fall (and we know how time flies), which means it’ll soon be time to serve turkey and roasts. While we love our turkey and roast recipes, you might want to try to mix things up a bit before the traditional dinners start. Tilapia is a great fish to serve for Sunday dinner. Sometimes kids think they don’t like fish — aside from fish sticks that is — but tilapia is a mild fish that is versatile and holds its seasonings very well. It’s a great fish to introduce to your kids if you haven’t already tried!

Since it’s almost Halloween, take time to prep for the festivities and get your kids involved, too! Orange glazed tilapia

Serves 4 people

Ingredients:

  • 1-1/2 pounds tilapia, boneless, skinless, rinsed and patted dry
  • 2 tablespoons butter
  • 1-1/2 onions, peeled and chopped
  • 4 oranges, peeled, sectioned and diced
  • 3 teaspoons cornstarch, mixed with water to form a slurry
  • 1-1/2 cups water
  • 1-1/2 cups orange juice
  • Salt to taste

Directions:

  1. Heat large sauté pan; adding butter and allowing to melt, but not brown. Add onions, sautéing until tender. Have onions “sweat”, but not caramelize. Add oranges and stir; allowing mixture to cook approximately two minutes.
  2. Slowly add cornstarch slurry (remember to stir it up before using, so as not to cause lumps); allowing to thicken to a paste.
  3. Gradually pour in orange juice to slightly thin paste to a glaze. (You may not need entire amount of orange juice.)
  4. When mixture gets to smooth glaze, remove from heat and spoon equal amounts over each tilapia filet and bake in pre-heated oven for approximately 20 minutes or until tilapia is firm.
