Tonights dinner: Margherita Pizza

It’s Friday night! Time to let loose and enjoy a relaxing weekend and good food. You’ve worked so hard all week, why not save some of those hard earned pennies and host your own pizza night. This simple recipe makes clever use of pre-made pit bread rounds to make healthy, homemade pizza a realistic reality.

Margeherita Pizza

Aruglua may not be something you keep on hand in your fridge, but it should be. Also known as rocket, this aromatic salad green lends a beautiful, fresh flavor to this pizza, as well as a lot of Vitamins A and C. Look for baby arugula in the prepackaged, organic greens section of your local grocer. If you can’t find it, this pizza is perfectly delicious without it. But, if you can find it, all the better. You’re guaranteed to have one heck of a tasty pizza night. The ideal way to kick off any weekend.

Easy Margherita Pizza

  • 4 flatbread or pita bread rounds
  • 1 fresh tomato, sliced very thin
  • 1 pound fresh mozzarella, sliced thin
  • 1/4 cup fresh basil, chopped
  • 4 cups arugula
  • salt & pepper to taste

Preheat the oven to 425 degrees. Spread tomato sliced on flatbread rounds. Lay mozzarella on top of the tomatoes. Sprinkle fresh basil on top. Salt and pepper to taste. Bake for 12-15 minutes, or just until the cheese is melted and ever so slightly bubbly.

Allow pizza to cool slightly before serving with a pile of fresh arugula on top. Enjoy!
