Turkey Vegetable Breakfast Burritos

Serves 4 Ingredients:
4 (8-inch) Tumaro’s jalapeno and cilantro tortillas
4 eggs, beaten
1 cup cooked ground turkey
1 cup finely chopped mixed vegetables
1 cup shredded cheddar or pepper jack cheese
1/4 cup sour cream
1/4 cup salsa Directions:
Warm tortillas in a skillet, one at a time, and set aside covered with a dish towel to keep them warm. In a large nonstick skillet over medium-high heat, cook eggs, using a spatula to move the egg mixture around, for 2 minutes. Add turkey and vegetables and cook, stirring frequently, for 2 to 3 minutes. Add cheese and cook, stirring, for 1 minute. Divide mixture among the tortillas and wrap into burritos. Serve garnished with sour cream and salsa.

Italian Pizza Tortilla

Serves 4 Ingredients:
2 (10-inch) Tumaro’s sun-dried tomato and basil tortillas
3/4 cup pizza sauce
3/4 cup thinly sliced or crumbled cooked sausage
1/2 cup sliced green and black olives
1/2 cup crumbled feta cheese
1 cup shredded mozzarella Directions:
Preheat oven to 400 degrees F. and place tortillas on a baking sheet. Bake for 5 minutes. Remove from oven and top with a layer of tomato sauce, sausage, olives, basil, feta cheese and mozzarella cheese. Return to oven and cook for 8 to 10 minutes or until cheese is melted and bubbly. Serve as a pizza or wrap.

Smoked Salmon Salad Wrap

Serves 2 Salmon WrapIngredients:
1 clove garlic, minced
Pinch of salt
Black pepper to taste
1 teaspoon Dijon mustard
Juice of a large lime
1 tablespoon olive oil
1/2 cup thinly sliced green onion (green and white parts)
6 ounces smoked salmon, flaked
2 cups mixed leafy greens
2 (8-inch) Tumaro’s garden spinach and vegetables tortillas
1/2 small avocado, halved, pitted, peeled, sliced
1/4 cup crumbled or sliced goat cheese Directions:
In a large bowl, whisk together garlic, salt, black pepper, mustard, lime juice and olive oil. Add green onion and salmon, stirring to combine. Add mixed greens and toss to coat. Divide between tortillas and top each with avocado and goat cheese. Wrap up, cut each in half at a diagonal and serve.

Cinnamon Peach Dessert Wraps

Serves 4 Ingredients:
1 egg
3 tablespoons sugar
Dash of salt
2 ounces heavy cream
2 tablespoons sour cream
1/2 cup all-purpose flour
1 1/2 teaspoons ground cinnamon
4 ripe but firm peaches, halved, pitted, sliced
3 tablespoons butter
Confectioners’ sugar
Ground nutmeg
2 (10-inch) Tumaro’s honey wheat tortillas Directions:
1. In a medium-sized bowl, beat egg with sugar until thick and foamy. Add salt, flour, cinnamon, cream and sour cream. Beat until batter is well mixed. Coat peaches with batter. 2. Melt butter in a large nonstick skillet over medium-high heat. Cook peaches until golden, cooking in batches and adding more butter, if necessary. Transfer to paper towels and sprinkle with confectioners’ sugar. Add a dash of nutmeg or cinnamon. Warm tortillas in a skillet. Divide peaches between the two tortillas and roll up. Cut at a diagonal and serve warm with vanilla ice cream or whipped cream and a drizzle of caramel sauce.
