Tonight’s Dinner: Chicken taquitos recipe

Chicken or beef tacos are always a quick and easy choice for dinner. But if your children aren’t as excited about them as you are, turn those tacos into little taquitos and watch those frowns turn upside down.

Whenever my family has a roast chicken, there’s always leftovers. When there are leftovers, it’s my job to try and figure out what to make with them. There’s chicken salad, chicken casseroles, or chicken taquitos. If you’re looking for something hot and easy, then chicken taquitos are absolutely the way to go. And what’s great about taquitos is that not only are they super easy to make, the kids love them!

Chicken taquitos

Serves 4

Ingredients:

  • 2 cups shredded chicken
  • 1 teaspoon ground cumin
  • 1 cup Mexican blend cheese
  • Salt and pepper to taste
  • 12 large tortillas
  • Vegetable oil

Directions:

  1. Combine chicken, cheese and cumin in a large bowl and toss with salt and pepper.
  2. Wrap the tortillas in a towel and microwave on high for one minute. Once warm and pliable, lay on a work surface and sprinkle two tablespoons of the chicken mixture along half of each tortilla. Roll the tortilla up around the filling and secure with a toothpick. Repeat with the rest of the chicken mixture and remaining tortillas.
  3. Heat one-third cup of vegetable oil in a large skillet. Fry half the taquitos over moderate heat, turning once, until golden brown and crisp. Transfer taquitos to towel-lined plate to drain. Repeat with the remaining taquitos. Serve immediately with sour cream or guacamole.
