Serves 4

Ingredients:

  • 4 halibut fillets
  • 1 (14.5 ounce) can diced tomatoes
  • 1 jalapeño, finely chopped
  • 1/3 cup finely chopped shallots
  • 2 garlic cloves, minced
  • 1/2 teaspoon minced fresh ginger
  • 1/2 cup white wine
  • 1/2 cup low-sodium chicken broth
  • Salt
  • Pepper
  • Rice (optional, for serving)
  • Arugula (optional, for serving)

Directions:

  1. In a slow cooker, combine tomatoes, jalapeño, shallots, garlic, ginger, wine, chicken broth, one-half teaspoon salt and one-quarter teaspoon pepper. Cook mixture on high for three hours.
  2. Season halibut fillets with salt and pepper. Place halibut into slow cooker with broth and cook on high for about 15-20 minutes, depending on thickness of the fish. (The halibut will turn white and flake apart when done.)
  3. Carefully remove halibut from slow cooker and serve over rice and a bed of arugula, if desired. Spoon broth over the top of the halibut.
