Low-carb slow cooker recipes

Want a warm, succulent dish of comfort food? Put your slow cooker to use. A slow cooker can be a busy low-carber’s best cooking tool – you just add your ingredients and turn it on, letting low heat create a melt-in-your-mouth meal. Here are some low-carb slow cooker recipes that can get you through the cold weather months.

Ratatouille

 

Beef Bolognese crock pot recipe
Serves 4 to 6

Serve this hearty, meaty sauce over low-carb pasta of your choice. Browning a few of the ingredients beforehand adds a rich depth of flavor. For even more flavor, stir in Parmesan cheese before serving.

Ingredients:
1 tablespoon olive oil
1 onion, thinly sliced
2 ounces prosciutto, chopped
1 pound lean ground beef
8 ounces sliced mushrooms
2 cups beef broth
2 tablespoons tomato paste
Sea salt and freshly ground black pepper to taste
1 tablespoons dried Italian seasoning

 

Directions:
Heat olive oil in a skillet over medium heat. Cook onions and prosciutto, stirring frequently, for 5 minutes. Add beef and mushrooms and cook, stirring often, until beef is browned. Add beef mixture and remaining ingredients to a slow cooker and cook on HIGH for 4 hours or LOW for 8 hours. 

 

Curry Turkey Apple Stew crock pot recipe

Serves 4 to 6

Lean and lavish, slow cooked turkey breast spiced with curry makes for a satisfying stew. You can substitute all or part of the turkey breast with dark turkey meat of your choice for a tasty change.

Ingredients:
1 tablespoon olive oil
1-1/4 pounds turkey breast cutlets, cut into strips
Coarse salt and freshly ground black pepper to taste
1 large onion, cut into wedges
2 cups chicken broth
2 stalks celery, sliced
3 carrots, halved, sliced
1 tablespoons curry powder
2 apples, cored, diced
2 tablespoons thyme leaves

Directions:
Heat oil in a skillet over medium heat and brown turkey, seasoning with salt and pepper while you cook. Transfer to slow cooker with a slotted spoon or spatula. In the same skillet, cook onion, stirring often, until golden. Transfer to slow cooker along with remaining ingredients. Cook on HIGH for 4 to 6 hours or on low 6 to 8 hours.

 

Slow Cooker Ratatouille recipe

Serves 6

These Mediterranean-style slow cooked veggies are infused with lemon, oregano and basil.

Ingredients:
1 cup vegetable broth
1 (15-ounce) can crushed tomatoes
1 onion, sliced
2 cloves garlic, minced
1 (1-pound) eggplant, trimmed, peeled, cut into cubes
2 zucchini, ends trimmed, halved, thinly sliced
1 crookneck yellow squash, halved, thinly sliced
1 red bell pepper, cored, thinly sliced
Juice and zest of a large lemon
Salt and freshly ground black pepper to taste
1 teaspoon dried oregano
1/4 cup thinly sliced basil
Extra virgin olive oil
6 tablespoons or more crumbled feta cheese

Directions:
Combine broth, tomatoes, onion, garlic, eggplant, zucchini, yellow squash, bell pepper, lemon juice and zest, salt and pepper, and oregano, stirring to combine. Cook on HIGH for 4 to 6 hours or on low for 6 to 8 hours. Serve garnished with basil, a drizzle of olive oil, and feta.
